CEDARBURG — One woman says desserts made with organic, whole-food ingredients can still taste good. She is working to prove that right with her small business, Bobby natalia Bakery.“I want to create desserts that people can have without feeling guilt,” said Natalie Beck.Beck of Cedarburg has always liked being in the kitchen since she was a child. For her, baking relieves stress. “When I’m baking I’m just focusing on the ingredients and I’m not focusing on anything else,” she said. Growing up, Beck was always surrounded by a lot of food. “If you come to my house, before you walk in the door someone will offer you something to drink or eat,” she said.But within the last couple years, Beck has been on a health journey. She has struggled with debilitating migraines for most of her life. Beck said she took a food sensitivity test and decided to cut a bunch of food from her diet. “I believe food should bring life, not harm,” she said.Beck began experimenting with baking. She cut gluten and sugar from her diet, but she still wanted to be able to eat dessert. “I refused to let my food be boring or bland,” she said.For example, instead of sugar, Beck uses Wisconsin maple syrup and honey. She likes to purchase organic ingredients locally. Beck also discovered einkorn flour, an ancient wheat. SIGN UP It was a journey of trial and error but soon she found success. She first experimented with her chocolate cake. After trying many recipes she served it — the cake is flourless and gluten free — to her family who loved it. “They’re like, ‘This tastes too good to be healthy. You should sell this,’” Beck said.Beck launched Bobby natalia Bakery during her church’s Christmas event last December with her chocolate cake as the gluten-free option for dessert. She said people loved it, and even people who didn’t order the gluten-free dessert wanted to eat it.“It was awesome,” Beck said. “Just reminds me that I have so much purpose in what I’m doing and people are looking for higher quality ingredient food.”Since then, people have reached out to Beck for personal orders. She recently delivered a chocolate cake for someone’s birthday. Beck has moved her bakery from her kitchen in her home to the commercial kitchen of From Scratch Catering in Cedarburg.
